A: For rosemary, use scissors to clip several sprigs that approximately the same size off of plant. Tie in small bundles, wrapping twine around the base. Hang the rosemary sprigs in a cool, dry and well-ventilated place to dry. Sage can be dried by layering individual leaves (not touching) on paper towels, up to five layers. Dry in cool oven overnight with just oven light on.
A: It's not necessary to dig them up as they overwinter quite well here in the Piedmont.
